The tomatoes are starting to come in! That means it's time for aSimple Sliced Tomato Onion Salad, right? There's nothing like a good, home-grown tomato, is there? John Denver even sang a song about them because they are so amazing! This salad is topped with a simple vinaigrette (recipe included).
You can make this Simple Sliced Tomato Onion Salad in about 10 minutes, using any kind of tomato and any kind of onion. In this case, I used a big Beefsteak tomato and red onion. Vidalia onions are especially good in this dish because they are light and sweet.
The flavor of this salad is enhanced when you let it rest a little after dressing it. Lois thinks the salad is best at room temperature, but it's also terrific after refrigerating it. And it holds up well, so you can save the leftovers in the refrigerator for a meal the second day, that is, if it isn't gobbled up during the first serving!
What You Need
You'll need a good Tomato Knife to slice the tomatoes real thin, but no other special tools are required. The key for the tomato knife is a good serrated edge. And a lovely platter or plate is essential for serving.

Great summertime salad! Increase the quantity of tomato and onion to fit the number to be served.
Course Salad
Cuisine American
- 1 large Beefsteak tomato (or other tomato)
- ½ red onion (or another type of onion)
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt & pepper (to taste, perhaps ¼ teaspoon salt and ⅛ teaspoon pepper)
- ¼ cup fresh parsley (chopped fine)

Thinly slice the tomatoes and onions.

Arrange the sliced tomatoes and onions on a small plate or platter, alternating the tomatoes and onions.

Sprinkle with salt and pepper.

Toss on the chopped parsley.

In a small bowl or measuring cup, mix the vinegar and oil until emulsified and drizzle over the salad.

For best results, let the salad rest for 20 minutes, and serve at room temperature.
